Blueberry Lemon Burst Bars

Ingredients:

  • 1 ½ cups all-purpose flour

  • ½ cup powdered sugar

  • ¾ cup cold unsalted butter, cubed

  • 2 cups fresh blueberries

  • 1 cup granulated sugar

  • 2 tablespoons all-purpose flour

  • 2 large eggs

  • ¼ cup fresh lemon juice

  • 1 tablespoon lemon zest

  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat oven to 350°F. Line a 9x9-inch baking pan with parchment paper.

  2. In a bowl, mix 1 ½ cups flour and powdered sugar. Cut in cold butter until crumbly. Press half the mixture firmly into the pan to form the crust.

  3. In another bowl, gently toss blueberries with 2 tablespoons flour. Spread blueberries evenly over the crust.

  4. Whisk eggs, granulated sugar, lemon juice, and lemon zest until combined. Pour this mixture over the blueberries.

  5. Crumble the remaining crust mixture over the top.

  6. Bake for 40-45 minutes, until golden and set.

  7. Cool completely, then dust with powdered sugar if desired. Cut into bars and serve.
