Mexican Breakfast Casserole Recipe

Ingredients:

  • 6 large flour tortillas
  • 1 can (15 ounces) black beans, drained and rinsed
  • 8 large eggs
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Cooked chorizo or seasoned ground beef

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick cooking spray or olive oil.
  2. Prepare the Ingredients:

    • In a skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, and cook until softened, about 5-7 minutes. If using chorizo or ground beef, add it to the skillet and cook until browned and cooked through. Remove from heat and set aside.
  3. Scramble the Eggs:

    • In a separate bowl, whisk together the eggs with a pinch of salt and pepper. Cook the eggs in the same skillet used for the vegetables, scrambling them until they are just set. Remove from heat and set aside.
  4. Assemble the Casserole:

    • Place two flour tortillas on the bottom of the greased baking dish, overlapping slightly to cover the bottom.
    • Spread half of the black beans evenly over the tortillas.
    • Spread half of the scrambled eggs over the beans.
    • Spread half of the cooked peppers, onions, and meat (if using) over the eggs.
    • Sprinkle half of the shredded cheddar cheese over the vegetables.
    • Repeat the layers with the remaining tortillas, black beans, eggs, peppers, onions, meat (if using), and cheese.
  5. Top with Salsa:

    • Pour the salsa evenly over the top of the casserole.
  6. Bake:

    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is melted.
  7. Serve:

    • Once baked, remove the foil from the baking dish. Let the casserole cool for a few minutes before slicing and serving.
  8. Enjoy:
