Mexican Breakfast Casserole Recipe
Ingredients:
- 6 large flour tortillas
- 1 can (15 ounces) black beans, drained and rinsed
- 8 large eggs
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Cooked chorizo or seasoned ground beef

Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick cooking spray or olive oil.

Prepare the Ingredients:
- In a skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, and cook until softened, about 5-7 minutes. If using chorizo or ground beef, add it to the skillet and cook until browned and cooked through. Remove from heat and set aside.

- In a separate bowl, whisk together the eggs with a pinch of salt and pepper. Cook the eggs in the same skillet used for the vegetables, scrambling them until they are just set. Remove from heat and set aside.

- Place two flour tortillas on the bottom of the greased baking dish, overlapping slightly to cover the bottom.
- Spread half of the black beans evenly over the tortillas.
- Spread half of the scrambled eggs over the beans.
- Spread half of the cooked peppers, onions, and meat (if using) over the eggs.
- Sprinkle half of the shredded cheddar cheese over the vegetables.
- Repeat the layers with the remaining tortillas, black beans, eggs, peppers, onions, meat (if using), and cheese.

- Pour the salsa evenly over the top of the casserole.

- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is melted.

- Once baked, remove the foil from the baking dish. Let the casserole cool for a few minutes before slicing and serving.
