Buckwheat Blueberry Pancakes Recipe

Ingredients:

  • 1 cup buckwheat flour
  • 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 cup fresh blueberries
  • Additional butter or oil for cooking
  • Maple syrup or honey for serving

Instructions:

  1. Prepare Dry Ingredients:

    • In a large mixing bowl, whisk together the buckwheat flour, all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Combine Wet Ingredients:

    • In another bowl, whisk together the buttermilk, eggs, and melted butter until smooth.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix. The batter should be slightly lumpy.
  4. Fold in Blueberries:

    • Gently fold in the fresh blueberries until evenly distributed throughout the batter.
  5. Preheat Griddle or Pan:

    • Preheat a griddle or non-stick skillet over medium heat. Lightly grease the cooking surface with butter or oil.
  6. Cook Pancakes:

    • Pour about 1/4 cup of batter onto the preheated griddle for each pancake. Spread the batter slightly with the back of a spoon to even it out.
  7. Cook Until Bubbles Form:

    • Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
  8. Flip and Cook:

    • Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until cooked through and lightly browned on the bottom.
  9. Keep Warm:

    • Transfer the cooked pancakes to a plate and cover with aluminum foil to keep them warm while you cook the remaining pancakes.
  10. Serve:

    • Serve the buckwheat blueberry pancakes warm, stacked high and drizzled with maple syrup or honey.
  11. Enjoy:

    • Enjoy these hearty and wholesome pancakes for a delicious breakfast or brunch treat!

Note: You can customize these pancakes by adding a sprinkle of chopped nuts or a dash of cinnamon to the batter for extra flavor. If you prefer, you can also use frozen blueberries instead of fresh ones. Simply fold them into the batter while still frozen. Adjust the sweetness of the pancakes by adding more or less sugar according to your taste preferences.
