Matcha Green Tea Pie
Ingredients:
For the Crust:
- 1 1/4 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted

- 1 (14-ounce) can sweetened condensed milk
- 3 large egg yolks
- 1/4 cup matcha green tea powder
- 1/4 cup hot water
- 1/4 cup fresh lime juice

Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish lightly and set it aside.

- In a bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press the mixture into the bottom and up the sides of the prepared pie dish using the back of a spoon or your fingers.
- Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let it cool while you prepare the filling.

- In a large mixing bowl, whisk together the sweetened condensed milk and egg yolks until smooth and well combined.
- In a separate small bowl, dissolve the matcha green tea powder in hot water, stirring until smooth.
- Add the matcha mixture, fresh lime juice, lime zest, and vanilla extract to the condensed milk mixture. Whisk until everything is evenly combined and smooth.

- Pour the matcha filling into the cooled graham cracker crust.
- Return the pie to the oven and bake for 15-18 minutes, or until the filling is set and no longer jiggles when gently shaken.
- Remove the pie from the oven and let it cool completely at room temperature. Then transfer it to the refrigerator to chill for at least 2 hours or until firm.
