Matcha Green Tea Pie

Ingredients:

For the Crust:

  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted

For the Filling:

  • 1 (14-ounce) can sweetened condensed milk
  • 3 large egg yolks
  • 1/4 cup matcha green tea powder
  • 1/4 cup hot water
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 1 teaspoon vanilla extract

For Topping (Optional):

  • Whipped cream
  • Lime slices
  • Matcha powder for dusting

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish lightly and set it aside.
  2. Make the Crust:

    • In a bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.
    • Press the mixture into the bottom and up the sides of the prepared pie dish using the back of a spoon or your fingers.
    • Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let it cool while you prepare the filling.
  3. Prepare the Filling:

    • In a large mixing bowl, whisk together the sweetened condensed milk and egg yolks until smooth and well combined.
    • In a separate small bowl, dissolve the matcha green tea powder in hot water, stirring until smooth.
    • Add the matcha mixture, fresh lime juice, lime zest, and vanilla extract to the condensed milk mixture. Whisk until everything is evenly combined and smooth.
  4. Bake the Pie:

    • Pour the matcha filling into the cooled graham cracker crust.
    • Return the pie to the oven and bake for 15-18 minutes, or until the filling is set and no longer jiggles when gently shaken.
    • Remove the pie from the oven and let it cool completely at room temperature. Then transfer it to the refrigerator to chill for at least 2 hours or until firm.
  5. Serve:

    • Once chilled and set, remove the pie from the refrigerator.
    • Optionally, top the pie with whipped cream, lime slices, and a dusting of matcha powder for decoration.
    • Slice and serve the matcha green tea pie chilled.
