Spinach and Feta Tart Recipe
Ingredients:
For the Tart Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 3-4 tablespoons ice water
For the Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 5 cups fresh spinach, chopped
- Salt and pepper to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 4 ounces feta cheese, crumbled
- 2 large eggs
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese

Prepare the Tart Crust:
- In a food processor, combine the flour and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together and forms a ball.
- Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the Oven:
- Preheat your oven to 375°F (190°C).

Prepare the Filling:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.

- Spread the cooked spinach mixture evenly over the tart crust. Sprinkle crumbled feta cheese on top.

- In a small bowl, whisk together the eggs and heavy cream until well combined. Season with salt and pepper to taste.
