Spinach and Feta Tart Recipe

Ingredients:

For the Tart Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 3-4 tablespoons ice water

For the Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 4 ounces feta cheese, crumbled
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Prepare the Tart Crust:

    • In a food processor, combine the flour and salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
    • Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together and forms a ball.
    • Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  3. Prepare the Filling:

    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
    • Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. Season with salt, pepper, dried oregano, and dried basil. Remove from heat and let it cool slightly.
  4. Assemble the Tart:

    • Roll out the chilled tart dough on a lightly floured surface into a circle large enough to fit your tart pan. Transfer the dough to a tart pan and press it gently into the bottom and sides. Trim any excess dough.
    • Prick the bottom of the tart crust with a fork to prevent it from puffing up during baking.
    • Spread the cooked spinach mixture evenly over the tart crust. Sprinkle crumbled feta cheese on top.
  5. Prepare the Custard:

    • In a small bowl, whisk together the eggs and heavy cream until well combined. Season with salt and pepper to taste.
  6. Bake the Tart:

    • Pour the egg and cream mixture over the spinach and feta in the tart crust. Sprinkle grated Parmesan cheese evenly over the top.
    • Bake in the preheated oven for 30-35 minutes, or until the tart is set and the crust is golden brown.
  7. Cool and Serve:

    • Allow the spinach and feta tart to cool slightly before slicing. Serve warm or at room temperature.
