Chive and Smoked Cheddar Pancakes with Maple-Glazed Bacon

Ingredients:

For the Pancakes:

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons fresh chives, finely chopped
  • 1 cup shredded smoked cheddar cheese
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • Additional butter or oil for cooking

For the Maple-Glazed Bacon:

  • 6 slices bacon
  • 2 tablespoons maple syrup
  • 1 tablespoon brown sugar
  • 1/4 teaspoon black pepper

  • Sour cream or Greek yogurt
  • Additional chopped chives for garnish

Instructions:

  1. Prepare the Pancake Batter:

    • In a large mixing bowl, combine the flour, chopped chives, shredded smoked cheddar cheese, baking powder, baking soda, and salt. Stir until well mixed.
  2. Mix Wet Ingredients:

    • In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Do not overmix; a few lumps are okay. Let the batter rest while you prepare the bacon.
  4. Prepare the Maple-Glazed Bacon:

    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • In a small bowl, mix together the maple syrup, brown sugar, and black pepper.
    • Place the bacon slices on the prepared baking sheet. Brush both sides of the bacon slices with the maple syrup mixture.
