Sweet Potato Pie Recipe

Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 3-4 tablespoons ice water

For the Filling:

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions:

  1. Prepare the Pie Crust:

    • In a large mixing bowl, whisk together the all-purpose flour, salt, and granulated sugar.
    • Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, 1 tablespoon at a time, mixing with a fork, until the dough just begins to come together. Be careful not to overwork the dough.
    • Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  3. Prepare the Sweet Potatoes:

    • Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake in the preheated oven for 45-50 minutes, or until they are tender when pierced with a fork. Remove from the oven and let them cool slightly.
    • Once cooled, peel the sweet potatoes and mash them in a mixing bowl until smooth. Measure out 2 cups of mashed sweet potatoes for the filling.

  5. Roll Out the Pie Crust:

    • On a lightly floured surface, roll out the chilled pie dough into a circle about 12 inches in diameter. Carefully transfer the dough to a 9-inch pie dish. Trim any excess dough from the edges and crimp the edges as desired.
  6. Assemble and Bake the Pie:

    • Pour the sweet potato filling into the prepared pie crust, smoothing it out evenly.
  7. Bake the Pie:

    • Place the pie in the preheated oven and bake for 50-60 minutes, or until the filling is set and the crust is golden brown. If the crust starts to brown too quickly, you can cover the edges with foil halfway through baking.
