Crockpot Turkey and Vegetable Recipe
Ingredients:
- 1 pound lean ground turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup assorted colored bell peppers, diced
- 1 cup zucchini, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
- In a skillet, cook the ground turkey until fully browned.
- Transfer the cooked turkey to the crockpot.
- Add black beans, diced tomatoes, bell peppers, zucchini, onion, and garlic to the crockpot.
- Pour chicken broth over the ingredients and stir in chili powder and cumin.
- Cook on low for 4-6 hours.
- Season with salt and pepper to taste before serving.
