Crockpot Turkey and Vegetable Recipe

Ingredients:

  • 1 pound lean ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup assorted colored bell peppers, diced
  • 1 cup zucchini, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. In a skillet, cook the ground turkey until fully browned.
  2. Transfer the cooked turkey to the crockpot.
  3. Add black beans, diced tomatoes, bell peppers, zucchini, onion, and garlic to the crockpot.
  4. Pour chicken broth over the ingredients and stir in chili powder and cumin.
  5. Cook on low for 4-6 hours.
  6. Season with salt and pepper to taste before serving.
