Italian Connoli Crepes

Ingredients:

For the Crepes:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups whole milk
  • 3 large eggs
  • 2 tablespoons unsalted butter, melted
  • Additional butter or oil for cooking

For the Filling:

  • 1 cup ricotta cheese
  • 2 tablespoons powdered sugar
  • 2 tablespoons candied citron, finely chopped

For the Lemon Syrup:

  • 1/4 cup lemon juice
  • 1/4 cup granulated sugar
  • Zest of 1 lemon

For the Pistachio Sugar:

  • 1/4 cup pistachios, finely chopped
  • 2 tablespoons granulated sugar

Instructions:

  1. Prepare the Crepe Batter:

    • In a blender, combine the flour, sugar, salt, milk, eggs, and melted butter. Blend until smooth. Let the batter rest for about 15 minutes.
  2. Make the Lemon Syrup:

    • In a small saucepan, combine the lemon juice, granulated sugar, and lemon zest. Heat over medium heat, stirring constantly, until the sugar is dissolved and the mixture has slightly thickened. Remove from heat and set aside.
  3. Prepare the Pistachio Sugar:

    • In a small bowl, mix together the finely chopped pistachios and granulated sugar. Set aside.
  4. Cook the Crepes:

    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or oil.
    • Pour about 1/4 cup of crepe batter into the pan, swirling to evenly coat the bottom. Cook for about 1-2 minutes, until the edges begin to lift and the bottom is lightly golden. Flip and cook for an additional 1 minute. Repeat with the remaining batter.
  5. Prepare the Filling:

    • In a bowl, mix together the ricotta cheese, powdered sugar, and chopped candied citron until well combined.
  6. Assemble the Crepes:

    • Spread a thin layer of the ricotta filling onto each crepe. Roll the crepes up or fold them into quarters.
  7. Serve:

    • Place the filled crepes on serving plates. Drizzle with the lemon syrup and sprinkle with the pistachio sugar.
